The Problem with Grains

Right now, the problem with grains is becoming more of a nationally-recognized thing, as many more people are suffering from celiac disease, which is caused by gluten found in grains and grain products. However, the advice we often year from the government and food manufacturers is that grains are fine to eat as long as we're eating the whole grain - rather than just the stripped-down version used in white flour products. This, though, is not true, either. Whole grain products of course contain gluten, if they're made with wheat grain, which can be a problem for celiac disease sufferers. However, whole grain products of nearly any kind actually contain toxins that are terrible for anyone - celiac disease sufferer or not.

Toxins found in grains

Most of the toxins found in grains are found in the germ - or grain embryo. These toxins include phytic acid and agglutinin. Phytic acid can actually keep the human body from absorbing essential nutrients, especially iron, and agglutinin can produce intestinal inflammation in the body. Besides this, grains contain tannins, which can damage the lining of the gastrointestinal tract and even keep children from growing at a healthy rate!

Eating toxin-free grains

It's really easy, actually, to eat grains without having to worry about the toxic overload they can cause in the body when not properly prepared. One of the best ways to process grains is to remove the bran and then ferment them before consumption. You can also sprout your own grains at home before cooking with them. However, it's important to learn how to deal with different types of grains, seeds, and nuts separately, since their different structures and contents will make it necessary to process them in different ways.

One excellent way to process the toxins out of some types of grain is to turn them into sourdough bread. In this type of bread, yeast and a souring process is used to ferment the grains. The fermentation process gets rid of many of the impurities in the grain, and the resulting bread is absolutely delicious.

Because the toxins found in grains keep the body from properly absorbing nutrients, it's especially important for pregnant women to eat toxin-free grains that are properly processed to remove phytic acid and other problematic substances.
